WHere is a simplified version of a drink featured on the seasonal menu. Designed as a party-sized premix that's loaded with the flavours associated with Christmas time, making it perfect for your holiday party. Reserve the remaining syrup to use in breakfast cocktails, puddings, or for more rounds of the drink.

For the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Drink (yields 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Directions
For the Cordial: Combine every items into a pan, heat until it reaches a simmer, agitating to dissolve. Then, remove from the burner and leave to cool down entirely. Transfer to a sealable bottle, close it keeping it in the refrigerator, it can be stored for around a month.
Preparing the Premix: Mix the specified liquids into one sizeable container, leave to sit for an hour, then strain best through cheesecloth, to ensure it's fully clarified.
When ready to serve: Measure 85ml of your premix to a mixing glass containing ice, and agitate carefully for about 60 seconds to cool it down. Pour into an frosted cocktail glass or a similar vessel, decorate with a few cranberries and finish with a quick spritz of the essential oil above the glass.
